DESCRIPTION: Have you ever prepared and/or eaten wild rabbit, chukar, quail, grouse or waterfowl and been less than impressed? Learn to properly care for and prepare your harvest with tips and techniques that gets your game successfully from field to table. Topics covered include game care, processing and storage; proper use of spices and marinades and the differences in handling and preparing wild upland game and waterfowl vs. domestically raised. Numerous recipes will be demonstrated and participants will be able to sample each of the prepared dishes.
